Instructions

  1. Preheat oven to 350℉ (180℃) and grease or line a 9-inch round pan.
  2. Add the yogurt, eggs, sugar, vanilla extract, and oil or applesauce to a large bowl. Whisk to combine.
  3. Wash and dry the yogurt cup, then add the all-purpose flour and baking powder to the bowl, mixing well.
  4. Fold in up to ½ cup of fruit, if desired.
  5. Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow the cake to cool completely on a wire rack before cutting and serving.
