Delightfully soft and custardy, these gluten-free French Toast Cups are perfect for sharing at breakfast or brunch.

  • 6 slices brioche or challah bread
  • 3 large eggs
  • ¾ cup whole milk
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • Pinch of salt
  • Butter or cooking spray for greasing muffin tin
  • Maple syrup, powdered sugar, or berries for serving

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a standard muffin tin with butter or cooking spray.
  2. Cut each slice of bread into quarters.
  3. Press 3 to 4 bread pieces into each muffin cup, forming a cup shape.
  4. Whisk together eggs, whole milk, sugar, vanilla extract, cinnamon, nutmeg, and a pinch of salt in a mixing bowl until smooth.
  5. Pour the custard mixture evenly over the bread cups, pressing down lightly.
  6. Bake for 22 to 25 minutes until puffed and golden brown.
  7. Allow to cool slightly before removing from the tins.
  8. Serve warm, topped with maple syrup, powdered sugar, or fresh berries.
