  • 3 to 4 pounds beef chuck roast
  • 2 large onions, sliced
  • 2 cups beef broth
  • 1 cup French onion soup
  • 4 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Season the roast with salt and pepper.
  3. Sear the roast on all sides in a large skillet until browned.
  4. Place the roast in a roasting pan.
  5. Top the roast with the sliced onions and minced garlic.
  6. Mix together the beef broth, French onion soup, and Worcestershire sauce in a bowl.
  7. Pour the mixture over the roast.
  8. Cover the pan with foil.
  9. Roast in the oven for 3-4 hours until the meat is tender.
  10. Remove from the oven and let rest for a few minutes before slicing.
