A rich and comforting soup infused with caramelized onions, tender beef short ribs, and topped with melted Gruyère cheese, perfect for gatherings or cozy dinners.

Ingredients

  • 2 lbs beef short ribs
  • 4 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup dry white wine
  • 2 tablespoons olive oil
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup Gruyère cheese, shredded
  • Crusty gluten-free bread slices

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the short ribs and brown on all sides. Remove and set aside.
  2. Add onions to the same pot and cook until caramelized, about 30 minutes, stirring occasionally.
  3. Add garlic and cook for 1 more minute.
  4. Pour in the wine, scrape the bottom of the pot, and reduce by half.
  5. Add beef broth, thyme, bay leaf, salt, and pepper. Return the short ribs to the pot.
  6. Bring to a boil, then reduce to a simmer and cook for 2-3 hours until the beef is tender.
  7. Remove ribs, shred the meat, and discard bones.
  8. Serve soup topped with shredded Gruyère cheese and crusty bread.
