A nostalgic gluten-free cookie recipe that combines egg whites, sugar, chocolate chips, and mini marshmallows for a light and airy treat.

  • 1 cup granulated sugar

  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat the egg whites until soft peaks form.
  3. Gradually add the sugar, continuing to beat until stiff peaks form.
  4. Gently fold in the vanilla, marshmallows, chocolate chips, and nuts if using.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet.
  6. Turn off the oven and place the baking sheet inside. Allow the cookies to bake slowly in the residual heat for several hours, or overnight.
