  • 1 cup Greek yogurt
  • 1/4 cup milk
  • 2 large eggs

Instructions

  1. In a large bowl, whisk together the flour, baking powder, and salt.
  2. In another bowl, mix the Greek yogurt, milk, eggs, honey (or maple syrup), and vanilla extract until smooth.
  3. Combine the wet ingredients with the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and add a little butter or oil.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
