  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 tablespoon ground cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup cream cheese (for frosting)
  • 1/4 cup powdered sugar (for frosting)
  • 1 tablespoon milk (for frosting)

Instructions

  1. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together the milk, egg, and melted butter.
  3. Combine the wet and dry ingredients until just mixed.
  4. In a small bowl, mix the brown sugar and cinnamon together.
  5. Heat a non-stick skillet over medium heat and pour 1/4 cup of pancake batter onto the skillet.
  6. Sprinkle a teaspoon of the cinnamon-sugar mixture on top of the pancake.
  7. Cook until bubbles form on the surface, then flip and cook until golden brown.
  8. For the frosting, mix the cream cheese, powdered sugar, and milk until smooth.
  9. Serve the pancakes warm, drizzled with the cream cheese frosting.

Notes

  • For extra flavor, add vanilla extract to the pancake batter.
  • These pancakes can be made ahead and reheated in the microwave.
  • Top with additional cinnamon-sugar mixture if desired.
