  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, combine the mashed sweet potatoes, almond flour, coconut sugar, and melted coconut oil.
  3. Add the eggs, ground ginger, baking powder, salt, and vanilla extract to the mixture and stir until well combined.
