A rich, decadent chocolate cake that is gluten-free and perfect for any occasion.

Ingredients

  • 2 cups 1:1 gluten-free flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 cup unsweetened cocoa or cacao powder
  • 2 cups sugar
  • 1 cup oil
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup milk
  • 1 cup coffee

Instructions

  1. Preheat oven to 325°F and generously spray 2 round cake pans.
  2. In a bowl, whisk together flour, salt, baking powder, baking soda, and cocoa powder.
  3. In another large bowl, mix together sugar, oil, eggs, and vanilla.
  4. Add dry ingredients to wet ingredients (be careful not to over-mix).
  5. Add milk and coffee and mix again (batter will be quite watery!).
  6. Pour batter into pans and bake for about 50 minutes or until a toothpick comes out relatively clean.
  7. Let cool completely before removing from pans.

Notes

For a diabetic-friendly version, consider using sugar substitutes like stevia, monk fruit, or allulose.
