Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a baking sheet with parchment paper.
  3. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  4. Cut the cold butter into the dry ingredients using a pastry cutter or your fingers until it resembles coarse crumbs.
  5. Pour in the buttermilk and add the egg if using; stir gently just until combined.
  6. Turn the dough out onto a floured surface and knead lightly just a few times to bring it together.
  7. Pat the dough into a 1-inch thick round.
  8. Cut out scones using a round cutter, and place them on the prepared baking sheet.
