  • 1/2 cup applesauce
  • 1/4 cup maple syrup
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup diced apples

Instructions

  1. Preheat the oven to 350°F (175°C) and line a mini muffin tin with liners.
  2. In a mixing bowl, combine gluten-free flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix applesauce and maple syrup until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the diced apples.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 15-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool before serving.
