  • 1/2 tsp ginger

  • 1 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, mix together the pumpkin puree, almond milk, maple syrup, and melted coconut oil.
  3. In another bowl, combine the gluten-free flour, baking soda, baking powder, spices, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the chopped pecans.
  6. Pour the mixture into the prepared baking dish.
  7. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  8. Serve warm with a scoop of ice cream on top if desired.

For those with diabetes, consider using sugar substitutes like stevia, monk fruit, or allulose instead of maple syrup.
