  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1/4 cup molasses

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the gluten-free flour, ginger, cinnamon, baking soda, and salt.
  3. In another bowl, cream together the brown sugar, granulated sugar, and butter until smooth.
  4. Add the egg and molasses to the sugar mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  6. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  7. Flatten each ball slightly and sprinkle with additional sugar if desired.
  8. Bake for 10-12 minutes or until the edges are firm.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Store in an airtight container for up to a week.
  • For extra spice, add a pinch of cayenne pepper.
  • These cookies can be frozen for longer storage.
