Easy Gluten Free Cruffins

Delightful cruffins that combine the flaky texture of croissants and the easy shape of muffins, all gluten-free and bursting with sweet cinnamon flavor.

  • 2 ½ teaspoons active dry yeast
  • 1 tablespoon cane sugar
  • 1 cup milk
  • 3 cups gluten free flour blend
  • ½ cup cane sugar
  • 6 tablespoons unsalted butter (frozen)
  • ¼ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • ½ cup cane sugar
  • 2 teaspoons ground cinnamon
  • 3 tablespoons unsalted butter (melted)
  • ¼ cup cane sugar
  • ½ teaspoon ground cinnamon

Instructions

  1. Warm milk to 110º F, add sugar and yeast, and let sit until frothy.
  2. Preheat oven to 200º F.
  3. Combine dry ingredients in a bowl.
  4. Grate frozen butter into the flour mixture.
  5. Add yeast mixture and vanilla, mixing gently.
  6. Roll out dough, add sugar-cinnamon mix, cut into strips, roll, and place in a muffin pan.
  7. Let rise until doubled in size.
  8. Bake, brush with melted butter, and roll in sugar-cinnamon mix.

Notes

Use sugar substitutes for a diabetes-friendly option. Store in an airtight container for up to 3 days or freeze for up to a month.
