Easy Gluten-Free Chicken Taquitos

Crispy, flavorful taquitos filled with seasoned chicken and fresh veggies, perfect for gluten-free diets.

  • 8 Cassava Flour Tortillas
  • 2 Cups Shredded Chicken
  • 1/2 Cup Diced Bell Pepper
  • 1/3 Cup Diced Red Onion
  • 1/4 Cup Mayo (avocado oil mayo preferred)
  • 3 Tablespoons Fresh Lime Juice
  • 2 Tablespoons Chopped Cilantro
  • 1 Teaspoon Chili Powder
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Salt

Instructions

  1. Add all filling ingredients into a large bowl and mix together with a spatula.
  2. Preheat a non-stick skillet over medium heat and spray with cooking oil.
  3. Warm tortillas in the microwave on a damp paper towel for 15-20 seconds.
  4. Fill each tortilla with a spoonful of filling and roll tightly.
  5. Place taquitos in the skillet, cooking on each side for 4-5 minutes until golden brown.
  6. Serve taquitos over fresh romaine lettuce with guacamole and salsa.

Notes

For best results, warm tortillas to prevent tearing and use fresh ingredients for enhanced flavor.
