  • 1 cup diced apples (peeled)
  • ½ cup rolled oats
  • ¼ cup melted butter (or coconut oil)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, mix the granulated sugar, brown sugar, eggs, applesauce, milk, and vanilla extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Fold in the diced apples and rolled oats.
  6. Divide the batter evenly among the muffin cups.
  7. In a small bowl, mix the melted butter with a bit of flour and sugar to create a crumb topping, then sprinkle it over the muffins.
  8. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow to cool for a few minutes before transferring to a wire rack.
