  • 1 cup diced potatoes
  • 1/2 cup diced red peppers
  • 1 cup fresh spinach
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and add diced potatoes. Cook until tender.
  3. Add red peppers and spinach to the skillet and sauté until the spinach is wilted.
  4. In a bowl, whisk together eggs, milk, salt, and pepper.
