  • 2 cups grated carrots
  • 1/2 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, combine the rolled oats, grated carrots, honey or maple syrup, applesauce, melted coconut oil, and vanilla extract.
  3. Add the baking powder, cinnamon, nutmeg, and salt to the mixture and stir until well combined.
  4. If using, fold in the chopped walnuts or pecans.
  5. Pour the batter into the prepared cake pan and spread it evenly.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Serve as is or with a light cream cheese frosting if desired.
