- 2 cups grated carrots
- 1/2 cup honey or maple syrup
- 1/2 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts or pecans (optional)
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, combine the rolled oats, grated carrots, honey or maple syrup, applesauce, melted coconut oil, and vanilla extract.
- Add the baking powder, cinnamon, nutmeg, and salt to the mixture and stir until well combined.
- If using, fold in the chopped walnuts or pecans.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
