Easy Almond Flour Banana Bread

A gluten-free banana bread made with almond flour, perfect for breakfast or as a snack.

  • 3 medium-large very ripe bananas, mashed (1 cup)
  • 3 large eggs
  • 1/4 cup maple syrup (any sweetener)
  • 1/4 cup avocado oil (or any mild oil/melted butter)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 cups almond flour
  • Cooking spray (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan with cooking spray.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add eggs, maple syrup, avocado oil, and vanilla extract; mix well.
  4. In another bowl, combine almond flour, cinnamon, baking soda, baking powder, and salt.
  5. Gently fold the dry ingredients into the banana mixture until just combined (do not overmix).
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 45-55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Ensure bananas are very ripe for the best flavor and moisture. Store leftovers in an airtight container.
