  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 1 1/2 cups graham cracker crumbs (certified gluten-free)
  • 1/2 cup unsalted butter, melted

Instructions

  1. Combine the graham cracker crumbs and melted butter in a bowl. Press the mixture into the bottom of mini cheesecake cups to form the base.
  2. Beat the softened cream cheese in another bowl until smooth. Add powdered sugar and vanilla extract, and mix until well combined.
  3. Whip the heavy cream in a separate bowl until stiff peaks form, then gently fold it into the cream cheese mixture.
  4. Spoon the cream cheese mixture over the crusts in each mini cheesecake cup.
  5. Chill in the refrigerator for at least 240 minutes or until set.
