Ingredients

Scale
  • 160 g Unsalted butter
  • 100 g White caster sugar
  • 150 g Light brown sugar
  • 1 medium Egg (at room temperature)
  • 1 medium Egg yolk (at room temperature)
  • 1 tsp Vanilla extract
  • 280 g Self-raising flour
  • 0.5 tsp Salt
  • 200 g Chocolate (either milk, white, or a mix of both)
  • 12 Mini Malteser Bunnies (either milk, white, or a mix of both)
  • 12 Mini Eggs (roughly one sharing bag)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Line a baking tray with parchment paper to keep your cookies from sticking.
  3. Beat the unsalted butter, white caster sugar, and light brown sugar together in a bowl until light and fluffy.
  4. Add the medium egg and medium egg yolk to the mix, followed by the vanilla extract. Continue beating until well combined.
  5. Sift the self-raising flour and salt together, then gradually fold into the butter mixture.
  6. Chop the chocolate into chunks if using a bar, then add it to the cookie dough.
  7. Gently mix in the Mini Malteser Bunnies and Mini Eggs until evenly distributed.
  8. Scoop tablespoons of dough and roll them into balls, placing them onto the prepared baking tray.
  9. Space the cookie balls evenly to allow for spreading during baking.
  10. Bake in the preheated oven for 10-12 minutes until lightly golden brown around the edges.
  11. Remove from the oven and allow to cool on the tray for a few minutes before transferring to a wire rack.
