Ingredients

  • 2 cups Long Grain White Rice
  • 4 cups Chicken Broth
  • 2 Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 cup Greek Yogurt
  • 2 cloves Minced Garlic
  • 1 cup Grated Cucumber
  • 2 tablespoons Dill
  • 2 tablespoons Lemon Juice
  • 1 teaspoon Oregano
  • 1 teaspoon Paprika
  • 1 cup Cucumber Substitute

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a large baking dish with olive oil.
  3. Spread the rice evenly across the bottom of the dish.
  4. Pour the chicken broth over the rice.
  5. Season the chicken breasts with salt, black pepper, and paprika.
  6. Place the seasoned chicken on top of the rice.
  7. Drizzle the chicken with the remaining olive oil for a crispy finish.
  8. Cover the baking dish tightly with aluminum foil.
  9. Bake in the preheated oven for 30 minutes.
  10. Remove the foil and bake for an additional 10 minutes until the chicken is fully cooked.
  11. Meanwhile, in a bowl, combine Greek yogurt, minced garlic, grated cucumber, dill, oregano, lemon juice, and a pinch of salt to create the tzatziki sauce.
  12. Slice the chicken and serve alongside the cooked rice drizzled with the tzatziki sauce.
