  • 6 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/4 cup sweet relish

  • 1/4 cup diced red onion
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Cook the elbow macaroni according to the package instructions.
  2. Drain and cool the macaroni.
  3. Combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, apple cider vinegar, sweet relish, celery, and red onion in a large mixing bowl.
  4. Add the cooled macaroni to the mixture and stir to combine.
