Ingredients

  • 1 cup pecans, finely chopped
  • 1 cup dates, pitted and chopped
  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 cup shredded coconut (optional)

Instructions

  1. In a large bowl, combine the chopped pecans, dates, almond butter, honey or maple syrup, and vanilla extract.
  2. Mix until all ingredients are well combined.
  3. If using, fold in the shredded coconut.
  4. Roll the mixture into small balls, about 1 inch in diameter.
  5. Place the balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Enjoy your delicious no-bake pecan balls!

Notes

  • Store in an airtight container in the refrigerator for up to a week.
  • Feel free to substitute other nuts or nut butters as desired.
  • These can also be rolled in cocoa powder or crushed nuts for added flavor.
