- 1 cup pecans, finely chopped
- 1 cup dates, pitted and chopped
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 cup shredded coconut (optional)
- In a large bowl, combine the chopped pecans, dates, almond butter, honey or maple syrup, and vanilla extract.
- Mix until all ingredients are well combined.
- If using, fold in the shredded coconut.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
