Decadent Flourless Pumpkin Muffins

Delicious and moist pumpkin muffins that are flourless, perfect for fall.

  • 1 cup pumpkin puree
  • 3/4 cup almond butter
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the pumpkin puree, almond butter, honey (or maple syrup), eggs, and vanilla extract until smooth.
  3. Add the baking soda, pumpkin pie spice, and salt to the mixture and stir until well combined.
  4. If using, fold in the chocolate chips.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
