  • 1 cup coconut oil, solid
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/4 cup almond milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose gluten-free flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dairy-free chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the solid coconut oil, brown sugar, and granulated sugar until smooth.
  3. Add the almond milk and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the gluten-free flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the dairy-free chocolate chips.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are golden brown.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Make sure to use solid coconut oil, not melted.
  • For a nut-free version, substitute almond milk with oat milk or another dairy-free milk.
