  • 8 oz gluten-free fettuccine
  • 1 cup cashews, soaked for 4 hours
  • 1 cup vegetable broth
  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Cook the gluten-free fettuccine according to package instructions. Drain and set aside.
  2. In a blender, combine soaked cashews, vegetable broth, nutritional yeast, garlic, olive oil, salt, and pepper. Blend until smooth and creamy.
  3. In a large skillet, heat the creamy sauce over medium heat.
  4. Add the cooked chicken to the skillet and stir to combine.
  5. Gently fold in the cooked fettuccine until well coated with the sauce.
