- 1 lb ground beef
- 1 small onion, diced
- 1 packet taco seasoning
- 1 cup salsa
- 4 large eggs
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro (optional)
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground beef and onion over medium heat until the beef is browned.
- Add the taco seasoning and salsa to the skillet, stirring to combine.
- In a separate bowl, whisk together the eggs, sour cream, and half of the cheese.
- Spread the beef mixture evenly in a greased pie dish.
- Pour the egg mixture over the beef, then top with the remaining cheese.
- Bake for 30-35 minutes, or until the center is set and the top is golden.
- Let it cool for a few minutes before slicing. Garnish with green onions and cilantro if desired.
Notes
