A delicious and -to-make crustless taco pie that is perfect for those following a keto or low-carb diet.

Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1 cup salsa
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, cook the ground beef and onion over medium heat until the beef is browned.
  3. Add the taco seasoning and salsa to the skillet, stirring to combine.
  4. In a separate bowl, whisk together the eggs, sour cream, and half of the cheese.
  5. Spread the beef mixture evenly in a greased pie dish.
  6. Pour the egg mixture over the beef, then top with the remaining cheese.
  7. Bake for 30-35 minutes, or until the center is set and the top is golden.
  8. Let it cool for a few minutes before slicing. Garnish with green onions and cilantro if desired.

Notes

  • For a spicier version, add jalapeños to the beef mixture.
  • This dish can be made ahead of time and reheated.
  • Serve with avocado or guacamole for added flavor.
