Delicious and gluten-free salmon bites coated in panko, served with a spicy Bang Bang sauce for a flavorful experience.

Ingredients

  • 1 lb salmon fillets, cut into bite-size pieces
  • 1/2 cup panko bread crumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • Salt and pepper, to taste
  • 2 tablespoons olive oil, for pan-searing
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon lime juice
  • Chopped green onions, for garnish

Instructions

  1. Mix the mayonnaise, sweet chili sauce, sriracha, and lime juice to make the Bang Bang sauce and set aside.
  2. Season the salmon pieces with salt and pepper.
  3. Dredge each piece in flour, then dip in the beaten eggs, and coat with panko bread crumbs.
  4. Heat olive oil in a skillet over medium heat. Pan-sear the salmon bites for about 3-4 minutes on each side, until golden and cooked through.
  5. Serve the salmon bites drizzled with the Bang Bang sauce and garnished with chopped green onions.
