  • 3 (8-ounce) packages cream cheese, softened
  • 3 large eggs
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • ½ cup sour cream
  • 1 tablespoon vanilla extract
  • ¼ cup granulated sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan. Wrap the pan in foil for a water bath.
  2. Mix together graham cracker crumbs, ¼ cup sugar, and melted butter; press into the bottom of the pan. Bake for 10 minutes and allow to cool.
  3. Beat the cream cheese until smooth, then gradually add 1 cup of sugar. Mix in sour cream and vanilla extract.
  4. Add the eggs one at a time, mixing on low speed.
  5. Pour the filling over the cooled crust and place the pan in a roasting pan filled with hot water halfway up the sides.
  6. Bake for 50-60 minutes until the center slightly jiggles.
  7. Turn off the oven, leave the door slightly open, and let the cheesecake rest for 1 hour.
  8. Chill in the refrigerator for at least 4 hours or overnight.
  9. Before serving, sprinkle the top with ¼ cup sugar and use a kitchen torch to caramelize the sugar. Slice and serve.
