  • 12 ounces gluten-free pasta
  • 1 pint cherry tomatoes, halved
  • 8 ounces fresh mozzarella, cubed
  • 1 cup fresh basil leaves, chopped
  • ½ cup Greek yogurt
  • ¼ cup mayonnaise
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the pasta and cook according to package instructions until al dente. Drain and set aside to cool.
  3. Combine in a large bowl the cooled pasta, halved cherry tomatoes, cubed mozzarella, and chopped basil leaves.
  4. Whisk together in another bowl the Greek yogurt, mayonnaise, balsamic vinegar, garlic powder, salt, and pepper until smooth.
  5. Pour the dressing over the pasta mixture and gently toss until everything is well coated.
  6. Taste and adjust the seasoning with more salt and pepper if needed.
  7. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
