A vibrant and refreshing pasta salad featuring rotini, cherry tomatoes, mozzarella, and a creamy dressing.

Ingredients

  • 8 ounces of rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls, halved
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water and add the rotini pasta. Cook until al dente, about 8-10 minutes, stirring occasionally.
  2. Drain the pasta and rinse it under cold water to stop the cooking process.
  3. Combine the cooked pasta, halved cherry tomatoes, mozzarella balls, and chopped basil in a large bowl.
  4. Mix mayonnaise, sour cream, balsamic vinegar, salt, and pepper in a separate bowl until well blended.
  5. Pour the dressing over the pasta mixture and toss until everything is evenly coated.
  6. Cover the salad and chill in the refrigerator for at least 30 minutes for the flavors to meld.
  7. Serve the salad cold, garnished with extra basil if desired.
