  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup kale, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Rinse the wild rice under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the diced onion, carrots, and celery, and sauté until softened.
  4. Stir in the minced garlic and cook for an additional minute.
  5. Add the wild rice, vegetable broth, mushrooms, thyme, rosemary, salt, and pepper.
  6. Bring to a boil, then reduce heat and simmer for about 45 minutes, or until the rice is tender.
  7. Stir in the chopped kale and lemon juice, and cook for another 5 minutes.
