Ingredients

  • 1 can corn, drained
  • 1 bell pepper, diced

  • 1 jalapeño, seeded and diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Combine black beans, corn, bell pepper, red onion, jalapeño, cherry tomatoes, cilantro, and avocado in a large bowl.
  2. Whisk together olive oil, red wine vinegar, lime juice, cumin, salt, and pepper in a separate bowl.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Chill in the refrigerator for at least 30 minutes before serving.
