A comforting and gluten-free quiche made with creamy cottage cheese and adaptable to your favorite vegetables and proteins.

Ingredients

  • 1 cup whole milk cottage cheese
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 cup grated cheese (optional)
  • Choice of vegetables and proteins (up to 1 cup total)

Instructions

  1. Preheat oven to 350°F.
  2. Spray a 9-inch baking dish with oil.
  3. Blend eggs, cottage cheese, salt, and pepper in a blender or food processor until smooth.
  4. Stir in grated cheese and your choice of vegetables/proteins.
  5. Mix thoroughly and pour into the prepared baking dish.
  6. Bake for about 45 minutes or until the center is set and edges are golden brown.
  7. Allow to cool slightly before slicing and serving.
