Instructions

  1. Combine in a microwave-safe mug: cottage cheese, egg, almond flour, maple syrup, vanilla extract, ground cinnamon, baking powder, and salt; mix until smooth.
  2. In a small bowl, mix 1 teaspoon of maple syrup with 0.25 teaspoon of cinnamon; dollop into the center of the batter and swirl gently.
  3. Microwave on high for 60 to 90 seconds until set and slightly puffed.
  4. Mix Greek yogurt (or cream cheese) with your chosen sweetener; spoon over the warm mug cake before serving.
