  • 3 large eggs
  • 1/4 cup almond flour
  • 1/4 cup blueberries
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine cottage cheese, eggs, and vanilla extract.
  3. In another bowl, mix almond flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until well combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into a greased loaf pan.
