  • 1/4 cup almond flour
  • 1/4 cup blueberries
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese, eggs, almond flour, baking powder, vanilla extract, and salt.
  3. Mix until smooth and well combined.
  4. Gently fold in the blueberries.
  5. Drop spoonfuls of the mixture onto the prepared baking sheet.
  6. Bake for 20-25 minutes or until golden brown.
