Delightful cookies that combine the rich flavor of coffee with the sweetness of sugar cookies, perfect for any occasion.

Ingredients

  • 2 1/4 cups all-purpose flour (certified gluten-free)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp instant coffee granules
  • 1 cup powdered sugar
  • 2 tbsp brewed espresso (or strong coffee)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, and salt in a bowl.
  3. Beat together the softened butter and granulated sugar until light and fluffy in another bowl.
  4. Add the egg, vanilla extract, and instant coffee granules to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper, spacing them apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let the cookies cool on a wire rack.
  9. Mix powdered sugar and brewed espresso until smooth and drizzle over cooled cookies.
