Coffee Cake Muffins

A delightful recipe for moist and flavorful coffee cake muffins, perfect for breakfast or a snack.

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the sour cream and vanilla extract until combined.
  5. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. In a small bowl, mix the brown sugar and cinnamon for the topping.
  8. Fill each muffin cup halfway with batter, sprinkle with the cinnamon sugar mixture, then top with more batter until the cups are about ¾ full.
  9. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra touch, add chopped nuts or chocolate chips to the batter.
  • These muffins can be stored in an airtight container for up to 3 days.
