Deliciously sweet and creamy coconut bars with a crunchy graham cracker crust, perfect for gluten-free diets.

  • 1 cup graham cracker crumbs
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup unsalted butter, melted
  • 1 can sweetened condensed milk
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar
  • Extra shredded coconut for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together the graham cracker crumbs, shredded coconut, and melted butter until well combined.
  3. Press the mixture into the bottom of a greased 9×9 inch baking dish.
  4. Bake the crust for 10-12 minutes, or until golden brown.
  5. Whisk together the sweetened condensed milk, heavy cream, and vanilla extract in a separate bowl.
  6. Pour the cream mixture over the baked crust and sprinkle with extra shredded coconut.
  7. Refrigerate for at least 2 hours or until set.
  8. Cut into bars and serve chilled.
