  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup strawberries, diced
  • 1 vanilla bean, seeds scraped
  • 1/2 cup heavy cream
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt in a large bowl.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Fold in the diced strawberries and scraped vanilla bean seeds gently.
  5. Whisk together the heavy cream, egg, and vanilla extract in a separate bowl.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Turn the dough out onto a lightly floured surface and gently knead a few times to bring it together.
  8. Pat the dough into a circle about 1 inch thick and cut into wedges.
  9. Place the scones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
  10. Allow to cool slightly before serving.
