A deliciously indulgent gluten-free version of the classic Italian Pasta Carbonara, featuring crispy pancetta and creamy Parmesan cheese.

  • 8 oz gluten-free spaghetti
  • 4 oz pancetta
  • 2 large eggs
  • 1 cup grated Parmesan cheese
  • Freshly ground black pepper
  • Salt

Instructions

  1. Cook spaghetti in salted boiling water until al dente.
  2. In a pan, cook pancetta until crispy.
  3. Whisk together eggs and grated Parmesan cheese in a bowl.
  4. Drain the pasta, reserving some pasta water.
  5. Combine pasta with pancetta, remove from heat, and quickly stir in the egg mixture.
  6. Add reserved pasta water to reach desired creaminess.
  7. Serve immediately with black pepper and extra Parmesan.
