  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1/2 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the almond flour, coconut flour, brown sugar, baking soda, and salt.
  3. In another bowl, whisk together the melted coconut oil, maple syrup, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. If using, fold in the chocolate chips.
  6. Spread the batter evenly in the prepared baking pan.
  7. Bake for 20-25 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
  8. Allow to cool before cutting into squares and serving.

Notes

  • Store leftovers in an airtight container at room temperature for up to 3 days.
  • For a nut-free version, substitute almond flour with oat flour.
  • These blondies can be frozen for up to 2 months.
