A delicious and nutritious morning treat made with sweet potatoes and cinnamon.

Ingredients

  • 1/2 cup almond flour
  • 1/2 cup rolled oats
  • 1/4 cup maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the mashed sweet potatoes, almond flour, rolled oats, maple syrup, cinnamon, baking powder, and salt.
  3. If using, fold in the chopped nuts.
  4. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.
  5. Bake for 15-20 minutes or until the edges are golden brown.
