  • 1 cup oats
  • 1/2 cup Greek yogurt
  • 1/2 cup almond milk
  • 1/4 cup honey or maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 cup raisins or chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. Combine in a mixing bowl the protein powder, oats, cinnamon, and baking powder.
  3. Mix in a separate bowl together the Greek yogurt, almond milk, honey (or maple syrup), and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Fold in the raisins or nuts, if desired.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 15-20 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before enjoying.
