Cinnamon Roll Muffins

Delicious Cinnamon Roll Muffins that combine the warmth of cinnamon rolls with the convenience of muffins. Perfect for breakfast or a sweet snack.

  • 1 1/2 cups gluten-free all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup milk (or dairy-free alternative)
  • 1/4 cup melted butter (or coconut oil)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon (for filling)
  • 1 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine gluten-free flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together milk, melted butter, egg, and vanilla extract.
  4. Mix the wet ingredients into the dry ingredients until just combined.
  5. In a small bowl, mix brown sugar and cinnamon for the filling.
  6. Spoon half of the batter into the muffin cups, sprinkle the filling on top, then add the remaining batter.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. For the glaze, mix powdered sugar with milk until smooth and drizzle over the cooled muffins.

Notes

Store in an airtight container for up to 3 days or freeze for up to 2 months.
