A delightful and gluten-free take on classic churros, these Easy Churro Cupcakes are light, fluffy, and bursting with cinnamon and sugar flavor.

  • 1 1/2 cups gluten-free all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk
  • 1 tbsp ground cinnamon
  • 1/4 cup sugar (for cinnamon sugar topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. Cream butter and sugar in a large bowl until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, until just combined.
  6. Fill cupcake liners about 2/3 full with batter.
  7. Bake for 15-18 minutes or until a toothpick comes out clean.
  8. Mix cinnamon and sugar together for the topping while cooling.
  9. Brush the tops of the cupcakes with melted butter and dip in the cinnamon sugar mixture. Enjoy!
