Rich, savory tacos made with tender, spiced chuck roast that’s perfect for family gatherings or a cozy night in.

Ingredients

  • 2 lbs chuck roast
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Taco shells or tortillas
  • Toppings (lettuce, cheese, salsa, etc.)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Sear the chuck roast until browned on all sides.
  3. Remove the roast and add chopped onion and garlic to the skillet; sauté until softened.
  4. Return the chuck roast to the skillet, sprinkle with chili powder, cumin, paprika, salt, and pepper.
  5. Add enough water to cover the roast halfway, then cover and simmer on low heat or transfer to a slow cooker and cook on low for 8 hours.
  6. Once the meat is tender, shred it with two forks.
  7. Serve the shredded beef in taco shells or tortillas with your favorite toppings.

Notes

Adjust spice levels according to your palate. Great for meal prepping.
