  • 8 ounces chorizo sausage, casings removed
  • 4 large eggs
  • 1/4 cup milk
  • Salt and black pepper to taste
  • 8 small corn tortillas
  • 1/4 cup finely chopped onion
  • 1/4 cup chopped fresh cilantro
  • Optional toppings: salsa, avocado, sour cream, lime wedges

Instructions

  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add chorizo and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes). Remove chorizo from skillet and set aside, leaving drippings in the pan.
  3. In a bowl, whisk together eggs and milk. Season with salt and pepper.
  4. Pour egg mixture into the same skillet and cook, stirring gently, until eggs are softly set.
  5. Warm tortillas according to package directions.
  6. To assemble tacos, place a portion of cooked chorizo on each warm tortilla.
  7. Top with scrambled eggs, chopped onion, and cilantro.
  8. Add your favorite optional toppings and serve immediately.
